Ingredients:
|
|
1/2pt black tea, no sugar - made with 2 tea bags
|
|
12oz dry fruit - raisins, sultanas etc
|
|
4oz sugar
|
|
2 medium eggs
|
| 8oz gluten free flour |
| 1 teaspoon gluten free baking powder |
| 1 teaspoon xanthan gum |
|
Directions
|
|
1) Soak dried fruit in half a pint of strong tea for about 20-30 mins.
|
|
2) Heat oven to gas mark 5, 190c, grease 2 lb loaf tin.
|
| 3) In a large bowl, beat together sugar, eggs until pale. Add gluten free flour and dry fruit with tea mixture. |
|
4) Spoon into lined tin, cook in centre of oven for about 1 hr.
|
|
5) Remove from tin immediately after cooking. Wrap well in kitchen foil. Serve slightly warm.

Ingredients:

|
6oz gluten free flour
|
|
2oz margarine
|
|
3oz sugar
|
|
4oz desiccated coconut
|
|
1 teaspoon xanthan gum
|
| 1 teaspoon baking powder |
|
Directions
|
|
1) Heat oven to gas mark 3. Line baking sheets with grease proof paper.
|
|
2) Cream together butter and sugar.
|
| 3) Add flour, xanthan gum, baking powder, coconut and 1 egg. |
|
4) Using dessert spoon - put a spoon full of mixture onto baking sheet, repeat as necessary, cook for about 15-20 mins.
|
|
|

Easy Cottage Pie
|
|
Using a mixture of a vegetable stock cube and beef gravy granuals gives a great mix of flavours.
|
|
|
|
Add some peas and chopped carrot before the tomatoes, for extra flavour, or serve separately on the side.
|
|
|
|
|
|
|
|
Madras Chicken Curry
|
|
Add a couple of chopped potatoes, as you are adding the chicken breasts and a handful of peas. You can also use beef or lamb, but adjust cooking time accordingly, until meat is tender.
|

Recipe: Easy, feel good Cottage Pie – Serves 3/4 (only problem is I often eat the whole thing!)

Ingredients:

|
1 LB of minced beef
|
|
1 onion
|
|
1 Kallo Just Bouillon premium vegetable stock cubes
|
|
1 Tin of chopped tomatoes
|
|
Salt and black pepper
|
|
Directions
|
|
1) Fry mince until brown
|
|
2) Chop an onion
|
| 3) Place the mince and onion in a casserole dish. |
|
4) Mix the stock cube with 300ml water and add to the dish.
|
|
5) Mix three teaspoons of Bisto gravy granuals with 200ml water and add to the dish.
|
|
6) Drain the tomatoes and add with salt and pepper.
|
|
7) Cover with a lid or foil in a pre-heated 200°c/ gas mark 6 oven for 1 and a half hours, stirring half way.
|
|
Mash
|
|
8) Cut 3/4 medium sized potatoes into cubes.
|
|
9) Put in a large pan and add salt. Boil for 20 mins.
|
|
10) Add splash of milk and knob of butter, mash to your taste.
|
|
11) Once mince is cooked and cooled, add mash on top and put back in the oven for 5 mins to brown.
|
|
|
|
|

|
Recipe: Chicken Madras Curry - Serves 3/4 (who needs takeaway, when it’s this easy?)
|
|
|
Ingredients:
|
|
4 chicken breasts
|
|
1 jar of Patak's Madras sauce
|
|
Rice
|
|
1 onion
|
|
1 red chilli
|
|
Small amount of ginger
|
|
Small amount of garlic
|
|
Vegetable oil
|
|
Directions
|
|
1) Heat two tablespoons of vegetable oil in a large pan.
|
|
2) Chop up one onion, one red chilli, small amount of ginger and garlic.
|
|
3) Add to the heated oil and stir well until the onion is tender.
|
|
4) Add four diced chicken breasts and fry until the meat is sealed (approx 5 minutes).
|
|
5) Pour over a jar of Patak's gluten-free Madras Curry Sauce, with half a jar of water and stir well for 20 minutes. If extra sauce is needed add another jar of curry sauce.
|
|
6) Cook 1 and a half cupfuls of rice in boiling water.
|
|
7) Plate up rice and pour curry on top.
