The nurse approached with the results…’Tiffany, you don’t have diabetes’…. hurrah! Wait, I wasn’t being tested for diabetes? I muttered I was being tested for coeliac disease, ‘Oh’, she replied, ‘the test is positive’. So, my life as a Coeliac began, after being told to eat whatever gluten-free products I wanted for the next month, I ate so many doughnuts and vanilla slices I went off them anyway and then of course there were my beloved meat and potato pies. Alas, a girl has to be strong! The gluten-free diet started tentatively, trying the various breads in space packaging and working out the minefield of ordering on prescription, although I finally worked out my likes and dislikes.
Today, life is simpler, while people are worried about ready meals causing cancer and obesity, I live a life of fresh ingredients, not to mention the caramel slices, bakewell tarts and apple pies…but still I haven’t managed to find a decent meat and potato pie, where the pastry isn’t like snow flakes and as sweet as sugar, just weird!
A girl needs a goal in life though and my meat and potato pie hunt is my holy grail, what’s yours? Or perhaps you’ve already found your alternative, or, worse still, your one of those people who never liked sweet or fattening things, so your diet hasn’t changed since being diagnosed with coeliac – crazy!
